Collection: Green Tea
Green tea is made from the leaves of the Camellia Sinensis and is minimally oxidized.
After picking, the tea leaves are thinned. The thinning is done on bamboo mats or long tables where the leaves are carefully turned over by hand. Then the leaves are briefly heated to stop the oxidation, this can traditionally be done in a wok or on a heated pan, so that the green color is preserved. The last step is to dry the tea leaves to extract as much moisture as possible from the leaves. This drying process can be done in 3 different ways (Wok-dried, Basket-dried or Sun-dried) depending on the specialty of the tea master.
Each green tea has its own traditional production process.
